Belgian-born Chef Danielle Maupertuis is the UK’s leading Executive Vegan Pastry Chef as well as an author, presenter and trainer at The Vegetarian Society.

Award-winning Chef Danielle has over 40 years of worldwide professional baking experience, including managing pastry chefs at 5* hotels. We discover more about her distinguished career and unrivalled expertise in creating gorgeous vegan pastry desserts.

After several years of working as a pastry chef, Danielle began to specialise in dessert pastry after meeting the manager of the Bristol Hotel in Beirut, whilst on holiday in Lebanon. He was looking for a Head Pastry Chef to open a pastry shop in the hotel and renew the existing range of desserts – what we now call “giving them a modern twist” and here Danielle managed a team of about fifteen pastry chefs.

Next Danielle became the Executive Pastry Chef for the most famous hotel located in the Christian part of Beirut, for three years, where she and her team delivered fabulous banquets and weddings for up to 700 people. Here Danielle took part in competitions with an international jury and her expertise became recognised.

“I won several gold and silver medals. This is where I really rose to the top of my creativity and skills. This is why Lebanon keeps a unique place in my heart.”

After returning to the UK and settling in Hertfordshire, Danielle became Executive Pastry Chef at the Marriott Hanbury Manor, a 5* hotel. She reflects, “And here I was to take on a new lease of my professional life: exploring all areas of dessert pastry: buffets, afternoon teas, plated desserts, chocolate and showpieces.”

Six years later she moved to a group of luxury hotels, spread over five continents, during which time she was awarded ‘Best Pastry Chef of the Year’. Danielle remembers, “I felt so proud my work was recognised, respected and appreciated.”

By now the vegan movement had seeped into the culinary world and Danielle realised that there were no vegan desserts for her guests. Creating a range of vegan desserts based on taste and presentation led to the publication of her book: ‘Vegans Deserve Better Than a Fruit Salad’, in which she presents over sixty recipes covering the main areas of pastry – parties, birthdays, buffets, party cakes, petit fours and more.

Danielle is currently writing her second book, ‘Veganissimo… afternoon teas and parties’ and her passion is teaching others to make the most stunning and delicious plant-based and gluten-free treats too. She offers online courses and her popular ‘Exclusive Vegan Afternoon Tea’ clubs that are now expanding from her Hertfordshire base.
